Oil

The olive-tree is in this quarters a constant presence, beloved and precious, nearly motherly.

There are lots of varieties, all native to the area, and various ways to conceive and produce the oil.

In our olive-groves prevails the "Dritta" an excellent cultivation quality, but the presence of different varieties like "Intosso, Carboncella, Cucco and Posola" are essential.

Olio Extravergine d'Oliva D.O.P. Fonte Arciunij (Extra virgin olive-oil D.O.P. Fonte Arciunij)

Land: Soil full of skeleton , uncultivated since 25 years with spontaneous and controlled grass growing. No chemical fertilizer use.

Varieties: mostly "Dritta" but also "Intosso, Carboncella, Cucco and Posola".

Time of harvest: last ten days of October, with stage of ripeness of 30-40%.

Harvesting system: manual with pneumatic combs, in open boxes; towards evening the olives are carried to the olive-press for being extracted within 24 hours.

Extraction: Procedure made in two phases with mixing machine and decanter.

Refining: Stainless steel vats under inertial gas.

Bottling: After the natural decantation, manually without filtering.

Preservation of bottles: at 14° C.
